Nutrition and Food Science

Major Information

The Nutrition and Food Science major leads to varied careers in which individuals apply principles of  nutrition to plan normal and therapeutic diets as registered dietitians. Careers for registered and non registered dietitians can also be to supervise the preparation of meals or develop new food products in  various public and private institutions. The major includes three emphasis areas: Dietetics (Didactic  Program in Dietetics) (DPD) which is accredited by the Accreditation Council for Education in Nutrition and  Dietetics, Community Nutrition, and Food Science/Food Systems Administration. Completion of the DPD  leads to eligibility to apply for accredited dietetic internships and subsequent national registration as a  dietitian (RD) after successfully passing the registration examination for dietitians. The Nutrition and Food  Science curriculum is focused heavily in the basic sciences (chemistry, anatomy and physiology, mathematics,  microbiology, and biochemistry). Professional coursework includes Professional Practice Strategies,  Introductory Food Science, Human Nutrition, Life Cycle Nutrition, Meal Management, Advanced Food Science,  Quantity Food Practicum, Community Nutrition, Metabolic Nutrition, Experimental Food Science, and Medical  Nutrition Therapy.

Professional Tips

  • The Dietetic emphasis requires a nationally accredited internship to be completed after graduation  to become a Registered Dietitian. It is recommended for other emphasis areas to complete at least  one internship while in school to gain relevant experience.  
  • ServSafe certification is highly required.  
  • Volunteer with related areas such as the Farmer’s Market, local food banks, etc. 

Résumé Tips

  • Bachelor of Science in Nutrition and Food Science. 
  • Include emphasis (Dietetics, Community Nutrition, or Food Science/Food Systems Administration). •
  • Include internship experiences. Only Dietetics emphasis is required to do an internship. • Include any certifications, including ServSafe.  
  • Include shadowing/volunteer experience. 
  • Include class project experiences such as assisting with the Farmer’s Market.
